Yummy Tummy Tuna Casserole: Quick Meals #2

Yummy Tummy Tuna Casserole: Quick Meals #2

Everyone in the house LOVES my tuna casserole!  It’s very hearty and is great for leftovers.  I got the original recipe from a friend of mine and tweaked it a bit for us.  This feeds us two to three times depending on if we have sides with it.  My husband and one year old absolutely love it!

It takes around 45 minutes total to prepare, but most of that time is in the oven, so you are free to do whatever while it comes together.

All you need to make this is two boxes of mac and cheese, a can of peas, a can of cream of mushroom soup, shredded cheddar cheese, and two or three cans of tuna.

We are usually Kraft Mac and Cheese people, but when I make this I just grab whatever is handy because we add so much to it.  Also, whenever I can, I usually buy “no salt added” canned veggies.  When the store is out, I just rinse them in a strainer.

The first step is to cook the mac and cheese according to the directions.  Then you’ll want to add in about a cup of shredded cheese while it’s still hot, so it can melt into the noodles.

Next, gently mix in all the other ingredients until combined.  Don’t get too enthusiastic with your stirring or you will mash the peas.  If you are worried you will mash them, mix everything else first then fold them in.

Once it is completely mixed, pour it into an 8×8 or 9×13 dish to go into the oven.  I like using an 8×8 just because it takes up less room in my dishwasher (so I don’t have to hand wash it).  If you use an 8×8 it will be FULL to the top.  This is okay because it doesn’t expand.

Then add cheese to your liking.  We usually finish off the bag, so about a cup.  After you have done this, cover it with aluminum foil and bake at 350 degrees for 25 to 30 minutes!  I hope you all enjoy!  If you have any questions or suggestions, leave it in the comments!  Below is a more printer friendly version of the recipe.
